Blackberry Maple Vegan Ice Cream


I had a major craving for ice cream the other day and was too lazy to go out to get some dairy free deliciousness from Whole Foods. "I'll make it!" I said. My mother looked at me incredulously, "You don't have an ice cream churner. You can't just decide to make ice cream. You need tools." Obviously, I decided to make it anyway. It turned out SO well. 

I used coconut milk as my base and blackberries to punctuate the sweet flavor. 

The coconut milk made it smooth and creamy and the blackberry gave it a delicious tart taste. I would highly recommend topping with some blackberries as well. The maple syrup and vanilla gave it a sweetness that wasn't overpowering and sea salt added the perfect balance. The one thing I would suggest is putting this in a round container since the one I put it into made it difficult to scoop. It will hold together like dairy ice cream if you use a scoop. 


Of course, it's only a Lemon Tribe recipe if I tell you about the nutrition profile as well! While this may have more sugar than my nutritionist may like, it's made of all organic ingredients that are powerhouses at detoxification and gut health.

Blackberries are loaded with antioxidants and Vitamin C to protect against those summer colds as well as fiber to help maintain gut health. Coconut milk is a healthy fat that is known for reducing inflammation, providing electrolytes, and helping build muscle. Maple syrup is a major favorite of mine for making desserts because it is a naturally occurring sugar rather than loading up on white sugar. It also is easier on the gut for digestion and the polyphenols in it make maple syrup a great source of antioxidants. 

An ice cream that is actually good for you to eat and delicious too. This is great to serve at parties or just eat the entire pint yourself! You can also use this as a base and add in your own mix of flavors. Let me know if you add in any new toppings in the comments below! 


Blackberry Maple Vegan Ice Cream


  • 1 can organic full fat coconut milk
  • 1/2 cup organic blackberries 
  • 1/4 cup nut milk (I used almond for this)
  • 2-3 tablespoons vanilla extract
  • 3-4 tablespoons maple syrup
  • Sprinkle of Pink Himalayan Sea Salt
  • 1/4 teaspoon cinnamon
  • Coconut shreds and blackberries for topping (to taste)


  • Blend all ingredients in a Nutribullet (or similar) except the coconut shreds and extra blackberries until fully combined (about 45 seconds)
  • Pour into round container (similar to an ice cream pint) and cover. Freeze for about 6 hours until solid. 
  • Using an ice cream scoop, scoop out ice cream into a bowl. If difficult to scoop, use boiling water to heat the scoop then try again. 
  • Top with blackberries, coconut shreds, and anything else you'd like and enjoy!
